Naturally rich in Polyphenols. particularly Hydroxytyrosol
Because of the harsh environment of the desert (127°F during summer. rocky soil. roots cannot develop easily. lack of water). the olive trees are so stressed that a phenomenon of panic (survival instinct) occurs. This causes the olive trees to produce a huge quantity of polyphenols (antioxidants) to survive. The resulting olive oil contains an extraordinary hydroxytyrosol value.
